Shiitake mushrooms or lentinus edodes or lentinus are a popular edible mushroom sometimes used in cooking, and extracts of shiitake mushrooms are sold which claim to have various health benefits.[1] Shiitake mushrooms are used in traditional Chinese, Korean, and Japanese medicine, and contain lentinan and lenthionine.[1] A number of medicinal uses of shiitake extracts have been investigated including anti-inflammatory, antiviral, and immune stimulating uses.[2]
