Whey is the liquid left over in the cheese making process, after the cheese has been curdled and removed. Liquid whey contains lactose, vitamins, protein, and minerals, along with traces of fat. Whey proteins consist of α-lactalbumin, β-lactoglobulin, serum albumin, immunoglobulins, and proteose-peptones.
